I love breakfast; it is my favorite meal of the day! I could eat breakfast morning, noon, and night any day of the week! Waffles are among my favorite breakfast food and I will never turn them down. When I was a wee little freak my dad had to travel for work on occasion, whenever he went out of town my mom would cook me breakfast for dinner and we would watch Dumbo. In between verses of “When I see an Elephant Fly” I would scarf down waffles and inevitably my face would be syrup stained from forehead to chin. Even as a full grown freak I can’t seem to enjoy waffles without getting a little maple syrup on my chipmunk cheeks. Let’s be honest, the mess if part of the fun!
This week to start off the New Year let’s plunge to the past and enjoy the freaky daughter’s favorite waffles! These waffles are no-fuss and minimal mess while cooking; I can’t promise minimal mess when eating them.
3 cups Flour
2 tablespoons Baking Powder
3 cups Almond Milk (or other vegan milk)
1/3 cup Orange Juice
1/2 Lemon Juice
1/4 cup Coconut Oil
1 tablespoon Vanilla Extract
1 tablespoon Cinnamon
Preaheat your waffle iron and coat as needed with margarine or oil.
Mix ingredients in a bowl and mix until smooth. Pour portions of batter into waffle iron until batter is gone.
Makes 8-10 waffles.Serve with fresh fruit, syrup, or fruit compote.
Pour yourself a cup of coffee, tea, a mimosa, Bloody Mary, whatever your beverage poison and enjoy along side these delicious waffles! You’ll notice the Texas shape of the waffles. While you may not have a Texas waffle iron do not fret, you can still enjoy bake and eat them. Although, I must confess they may not be as wonderfully scrumptious in a plain old circle or square shape. As we all know everything is bigger and better in a Texas shape.
