Ginger Granola

I know what you’re thinking. What, can it be? Has our Freaky Vegan Daughter returned to grace it with more delightful and delicious recipes? Fear not dear followers, it is true I have returned.

It’s been a year and some change of adventures, adjustments, and understanding. After some much needed time away, I’m back. I won’t bore you with the details but I will say I have learned that I am in no way a cold climate gal. Snow and I don’t really see eye to eye. It won’t be long until I return to the warm breeze of the south.

Without further ado I give you a super tasty granola recipe.

Preheat oven to 350F

8 cups rolled oats or steel-cut oats

2 cups raw nuts ( I am a pecan fan when it comes to granola)

2 – 2 1/2 cups dried fruit

2 tablespoons seeds (sunflower, chia, sesame, or other)

1 tablespoon grated ginger

1 1/2 teaspoons cinnamon

*1/3 cup neutral oil (coconut, sunflower, grapeseed)

1/3 cup agave or molasses

Place all ingredients in a bowl and mix well. Place on a  baking sheet and bake for 1 hour, stir every 10 minutes. Remove from oven and let cool, store in an air tight container. Enjoy this granola with almond milk, solo, or with fruit. If you don’t follow the freaky vegan brick road pair this granola with yogurt, greek or otherwise.

*I suggest coconut oil as it adds a bit of sweetness. If you use coconut oil run hot water over the jar until it is liquid.
